Liebe Freunde, Kolleginnen und Liebhaber des Craft Beers,

Unter dem Leitgedanken „Wissen zu Hefe formt Charakter des Biers“ verbindet das Beer Craft Forum 2026 Forschung, Handwerk und sensorische Praxis. Im Mittelpunkt stehen historische Hefen aus Südtirol, alkoholfreie Biere und regionale Rohstoffkreisläufe. Bier wird dabei als Ausdruck regionaler Identität verstanden – von der Hefe über Hopfen und Malz bis hin zu Bieren aus ausschließlich regionalen Zutaten, zur Differenzierung und Profilierung am Markt.

Das Forum zeigt, wie Wissen aus der Forschung direkt im Sudhaus wirksam wird, wie sich sensorische Profile gezielt gestalten lassen und wie daraus klare Positionierungen und glaubwürdige Geschichten für regionales Craft Beer entstehen. Es vereint Craft-Brauer:innen, Wissenschaft, Beer Judges und Multiplikatoren, Craft Beer – auch ohne Alkohol – klar zu positionieren und gemeinsam weiterzuentwickeln. Begleitend zu den Inhalten macht die Verkostung ausgewählter Biere Qualität, Herkunft und Charakter im Glas erlebbar.

Die Veranstaltung findet in deutscher und italienischer Sprache statt.

Block 4: Vergleichsverkostung von alkoholfreien Bieren

Verkostung von (6-8) alkoholfreien Bieren mit maltosenegativer Hefe, gestoppter Gärung, antalkoholisierten Biere - Expertenkontakt und Ausklang

Für die Verkostung ist der Einsatz einer einfachen Verkostungsapp geplant. Die Präsentation der Ergebnisse für die TeilnehmerInnen erfolgt in Echtzeit und dient zur wissenschaftlichen Auswertung.
